abstract | (57) [Summary] [Problem] Most of bioactive substances having a function are heat, Many of them have properties that are susceptible to loss of activity due to decomposition or denaturation by light, oxidation or the like. In view of safety issues and the obligatory labeling of all additives, there is an increasing interest in natural antioxidants, and among them, the number of water-soluble antioxidants is small, and development is desired. The present inventors have conducted intensive studies to solve the above-mentioned problems, and as a result, by adding egg yolk protein hydrolyzate to a substance which is susceptible to oxidative degradation, bitterness is reduced and safety is improved. It has been found that a liquid composition having excellent oxidation stability can be obtained, and the present invention has been completed. |
