abstract PROBLEM TO BE SOLVED: To provide a novel enzyme capable of enzymatically producing a tartaric acid ether compound useful as a drug, a functional food material, etc., a method for easily producing a tartaric acid ether compound using the enzyme, and a novel method. A tartrate ether compound is provided. SOLUTION: A reaction in which a flavonoid having a phenolic hydroxyl group or a phenolic hydroxyl group of an analogous compound thereof acts on an epoxy ring of an epoxy succinic acid to form a tartaric acid ether compound in which one or more tartaric acid residues are ether-bonded. Novel tartrate ether compound-forming enzyme that catalyzes the reaction. A method for producing a tartaric acid ether compound by allowing the enzyme to act in the presence of an epoxysuccinic acid and a flavonoid having a phenolic hydroxyl group or a related compound thereof, and a method in which the epoxy ring of epoxysuccinic acid has a phenolic hydroxyl group A novel tartaric acid ether compound, wherein one or more tartaric acid residues are ether-bonded to a phenolic hydroxyl group of a compound or a related compound thereof.
