(57) [Problem] To provide low molecular weight gellan gum and a grease-like gel containing the same. SOLUTION: Gellan gum having a low molecular weight can be obtained by making gellan gum-containing sol acidic to about pH 3 and heating to cut its molecular chain. When a salt is added to the low molecular weight gellan gum-containing sol to form a gel by cooling, the gel becomes a grease-like gel. This grease-like gel has heat resistance, exhibits an intermediate property between a sol and a gel, and has a property of dissolving in the mouth, and is used as a raw material for dressings, jelly drinks and the like. |
