SOLUTION: Pseudomonas SP KO-89 Amino acid sequence of maltopentaose-forming amylase derived from 40 (Shida, O. et al., Biosci. Biotech. Biochem. 56 Vol. 76-80, 1992), a gene encoding maltopentaose-high-producing α-amylase having an amino acid sequence in which the amino acid residue at position 57 or 139 is substituted, a plasmid containing the gene, and a plasmid comprising the gene. Transformed E. coli carrying the plasmid. |
