abstract | (57) [Problem] To identify a raffinose synthase and provide an efficient method for producing raffinose. SOLUTION: Raffinose synthase having the following properties is allowed to act on sucrose and galactinol to generate raffinose. (1) Action and substrate specificity: Raffinose is produced from sucrose and galactinol. (2) Optimum pH: about 6 to 8 (3) Optimum temperature: about 35 to 40 ° C. (4) Molecular weight: molecular weight measured by gel filtration chromatography: about 75 kDa to 95 kDa polyacrylamide gel electrophoresis (Native P AGE): about 90 kDa to 10 Molecular weight measured by SDS-polyacrylamide gel electrophoresis (SDS-PAGE) under 0 kDa reducing conditions: about 90 kDa to 100 kDa (5) Inhibition: Inhibited by iodoacetamide, N-ethylmaleimide, myo-inositol. |
