(57) [Problem] To discover a novel prolyl oligopeptidase that functions even in the presence of high concentration of sodium chloride, and to develop a protein hydrolysis process using the enzyme. SOLUTION: Prolyl oligopeptidase derived from a microorganism belonging to Sphingomonas capsulata can retain 50% or more of the maximum activity even in the presence of 2M salt. Further, by performing a hydrolysis reaction in combination with a commercially available enzyme, the protein is highly degraded. |
