abstract (57) [Summary] In the present invention, a gel is formed in water and various organic solvents, and its typical overall formula is represented by the formula (I), wherein R 1 is CH 3 , CH 2 —CH (CH 3 ) 3 , CH (CH 3 ) CH 2 CH 3 , where R 2 is H, CH 3 , CH 2 OH, (CH 2 ) n —COOH, (CH 2 ) 4 —NH—CO—OCH 2 C 6 H 5 , and R 3 is A dipeptide residue, m is 0 or 1, and n is 1 or 2; or (II), wherein R 1 is CH 3 , CH 2 —CH (CH 3 ) 2 or CH (CH 3 ) CH 2 CH 3 , R 2 is CH 2 —CH (CH 3 ) 2 and R 3 is H, CH 3 , CH 2 OH, (CH 2 ) n —COOH or (CH 2 ) 4 —NH a -CO-OCH 2 C 6 H 5 , R 4 is a tripeptide residue, m is 0 or 1, relates to the combination of n-terminal Fmoc protected peptide n is 1 or 2. These types of peptides form gels in aqueous solutions, are biologically compatible, useful for drug delivery, antigen delivery, useful as food additives to delay food spoilage, and act as fillers. .
