abstract (57) [Abstract] [Problem] Okara (tofu residue) in food waste Some of these nutrients have high nutritive value, and by reusing them, inexpensive and high-nutritional miso raw materials are to be re-produced. The present invention focuses on an alcohol extract of Fengsen flower which can biochemically treat okara. In other words, by mixing this Osensen alcohol extract with okara, Okara can be modified into a suitable miso material. This seems to be due to naphthoquinone and the like, which are the active ingredients of the Hosensen alcohol extract. Okara treated with the Hosensen alcohol extract is used by mixing with the original raw materials (soybean, wheat, etc.).
