PROBLEM TO BE SOLVED: To provide a production method for efficiently obtaining a low water content ε-polylysine or a salt thereof which works extremely well for applications in which the water content of ε-polylysine or a salt thereof has a bad effect. Is provided. SOLUTION: An aqueous solution containing ε-polylysine or a salt thereof is azeotropically dried, dehydrated and dried in the presence of an azeotropic agent to obtain ε-polylysine or a salt thereof having a water content of 15% by weight or less. |
