(57) [Summary] [PROBLEMS] To prevent discoloration of a pickled eggplant during transport and maintain freshness without increasing the transport weight. SOLUTION: An underpickled eggplant for eggplant pickles, which has been subjected to a color stop treatment and a salting treatment, is charged into a bag which is kept airtight, and inert gas such as nitrogen gas or carbon dioxide gas is not enclosed without pickling liquid. One or more kinds of gas are mixed and enclosed for transportation. |
