abstract (57) [Problem] To provide a peptide composition having no taste including bitterness. SOLUTION: A peptide composition obtained by hydrolyzing malt protein obtained from barley malt protein, preferably beer mash, with protein enzyme hydrolysis, particularly with alkaline protease. Producing a peptide composition, comprising removing a bark of barley malt to separate a fraction having a high protein content and subjecting the high protein fraction of barley malt to an enzymatic hydrolysis treatment to obtain a protein; Method. This preferred method is to pulverize the beer feed lees with a pressure pen, remove the malt bark by sieving the obtained pressure pen pulverized product in the presence of water, and centrifuge the fraction that has passed through the sieve.
