abstract |
(57) [Summary] [Structure] A member of the genus Lactobacillus, characterized by low productivity of lactate oxidase and glucose oxidase, preferentially high production of pyruvate oxidase, and excellent heat and storage stability. Pyruvate oxidase. [Effects] This enzyme is novel, and since this bacterium has a high ability to produce this enzyme as well as a low ability to produce other oxidases, it can be used as a cell-free disruption solution without purification to a pure enzyme. It can be used for the determination of pyruvic acid and other applications. |
