(57) [Summary] The instant cereal containing psyllium is described. This cereal contains plantain that has been extruded and pre-moistened, ie, mixed with water prior to mixing with other cereal ingredients. The pre-moistened psyllium, when mixed with other ingredients, provides instant cereals in which psyllium has superior taste characteristics to similar cereals that have not been treated in this way. The cereals of the present invention are particularly effective in lowering serum cholesterol levels in individuals who consume them. Preferred cereals contain ingredients such as wheat, corn or oat flour. Preferred forms of cereal include flakes, puffs, nuggets, shreds, and padded products. |
