titleOfInvention | Low temperature alkaline protease, microorganism producing the same, method for producing the same, detergent composition containing the enzyme and enzyme preparation for food processing |
abstract | (57) [Abstract] [PROBLEMS] To provide a novel and high-performance low-temperature alkaline protease useful as an enzyme for detergents and the like. A low temperature alkaline protease having the following enzymatic properties, a microorganism producing the same, a method for producing the same, a detergent composition containing the same, and an enzyme preparation for food processing. 1) It works at least 0 ~ 60 ℃, the optimum temperature is 28 ~ 32 ℃, 38-42 ° C in the presence of Ca 2+ . 2) Stable up to about 20 to 24 ° C at pH 10.0 for 15 minutes, and to about 28 to 32 ° C in the presence of Ca 2+ . 3) Works at least pH 5-12, optimal pH is about 10. 4) Stable at pH 5-11 at 20 ℃ for 15 minutes. 5) The estimated molecular weight by SDS-PAGE is 27,000 ± 1,000. 6) It hydrolyzes casein well, and also acts on hemoglobin, keratin and gelatin. Suc-Ala-Ala-Pro-Ph e- p Na, Glt-Ala-Ala-Pro-Leu- p Na, Suc-Ala-Ala-Pro-Va l- p Na, Z-Gly-Gly-Phe- p Na, Suc-Ala-Ala-Ala- p Na, Suc -Ala-Pro-Ala- p Na and Suc-Ala-Ala-Phe- p Na do not act. 7) Inhibited by Hg 2+ . |
