abstract (57) [Abstract] [PROBLEMS] To provide a processed food in which deterioration of texture caused by water movement is suppressed. SOLUTION: A component having a moisture value B of 5% or more higher than an intrinsic moisture value A is contained in an amount of 3% by weight or more per dry weight in a portion where texture deterioration occurs due to moisture absorption, and further 50% by weight per wet weight in the portion. Processed food characterized by containing a smaller amount of water.
