abstract (57) [Abstract] [Problem] Ume vinegar can be effectively used by preventing the growth of ume vine in ume vinegar, which is a by-product of umeboshi, and there is no fear of pesticide contamination. A method for manufacturing the same is provided. SOLUTION: The ripe plum fruits are placed in a mixed solution of alcohol, honey and a multi-mineral balance citrate on which weights are placed and soaked, and then the plum fruits are recovered after a predetermined period.
