SOLUTION: The exogenous enzyme obtained from an Aspergillus microorganism has a molecular weight of about 33,000 and a stable pH of 3-1. Alcohol acetyltransferase having a stable temperature of 0 up to 40 ° C., a method for producing alcoholic beverages using the same, a method for quantifying acetyl CoA, acetylcholine and an organophosphorus compound.
