(57) [Summary] [Objective] An object is to provide a gel containing at least one polysaccharide and whey protein and a method for producing the same. PROBLEM TO BE SOLVED: To produce a food gel having appropriate elasticity and viscosity without requiring heating. SOLUTION: A sol containing all the ingredients to be included in the composition of the gel is prepared and treated under hydrostatic pressure. |
