abstract | (57) [Summary] [Purpose] To provide a novel low temperature active protease. [Structure] A protease having the following properties. Action and substrate specificity: It acts on casein, gelatin, albumin, and hemoglobin, and specifically decomposes casein, gelatin, albumin, and hemoglobin in this order. Optimum action pH: 7.5-8.0, pH stability: 20 C., stable at pH 5.5 to 10.5 under conditions of holding for 1 hour, optimum working temperature: 20.degree. C. under conditions of pH 10.5, 40.degree. C. under conditions of pH 8.0, temperature stability Property: pH 10.5, 10 to 30 under the condition of holding for 1 hour Almost no inactivation at a temperature of ℃, about 30% inactivation at 40 ℃, completely inactivation at 50 ℃, enzyme activity: at 20 ℃, having an activity of about 60% or more of the maximum activity, Active center: metal ion, molecular weight by SDS-PAGE: About 58 kDa. |
