(57) [Summary] [Structure] A method for concentrating acidic phospholipids by extracting lecithin with acetone under acidic conditions. [Effects] According to the method of the present invention, it is possible to relatively easily obtain a lipid mixture containing a high concentration of acidic phospholipid from lecithin. Further, the lipid mixture is useful as an emulsifier or a bitterness suppressor. |
