[Effect] A lactic acid bacterium having tyrosine decarboxylase decomposes tyrosine, which is almost insoluble in water, into tyramine. From the structural formula, tyrosine becomes tyramine that dissolves in water when carbon dioxide is removed. Therefore, the method of the present invention effectively removes tyrosine, which is a white solid substance, as tyramine that can be dissolved in water by the action of lactic acid bacteria, from foods. Since anaerobic lactic acid bacteria remove the white solid of tyrosine, it is possible to effectively remove the white solid of tyrosine by immersing the food in the culture solution of lactic acid bacteria and filling the packaging bag in an environment where air is not supplied. . |
