(57) [Summary] [Object] To provide a thermostable O-acetylserine sulfhydrylase and a method for producing the same. [Structure] Thermostable O-acetylserine sulfhydrylase having the following properties; Action: β-cyanoalanine is produced from O-acetyl-L-serine and cyanide. Optimum pH: 7.0-9.0. Stable pH: 6.0-10.0. Optimum temperature: 40-50 ° C. Thermal stability: Stable up to 70 ° C when kept at pH 7.5 for 30 minutes. Molecular weight: 60,000-80,000 by gel filtration. [Effect] A thermostable O-acetylserine sulfhydrylase and a method for producing the same are provided. |
