Novel proline dipeptidase and method for hydrolyzing proteins and peptides using the proline dipeptidase |
abstract |
(57) [Summary] [Objective] Proline dipeptidase with high hydrolysis activity for Pro-Hyp and method for efficiently hydrolyzing proline- and hydroxyproline-rich proteins and peptides using the proline dipeptidase To do. [Structure] Aureobacterium este raromaticum IFO3752 is X-Hyp It produces a proline dipeptidase that hydrolyzes a dipeptide (X is a normal amino acid, Hyp is hydroxyproline). By incorporating the hydrolysis by this enzyme into the hydrolysis reaction by the known protease preparation, it is possible to efficiently perform the hydrolysis of the protein containing a large amount of hydroxyproline such as collagen and gelatin. |
