[Structure] Aureobacterium este raromaticum IFO3752 is X-Hyp It produces a proline dipeptidase that hydrolyzes a dipeptide (X is a normal amino acid, Hyp is hydroxyproline). By incorporating the hydrolysis by this enzyme into the hydrolysis reaction by the known protease preparation, it is possible to efficiently perform the hydrolysis of the protein containing a large amount of hydroxyproline such as collagen and gelatin.
