(57) [Summary] [Purpose] To provide a method by betting and flow injection, which is a method for quickly and simply measuring the degree of damage of starch in flour such as wheat flour. [Structure] A step of hydrolyzing starch with amylase to produce maltose, and hydrolyzing a sample solution containing the maltose with glucoamylase by flow injection analysis to produce glucose, and oxidizing glucose with glucose oxidase. It has a reaction step, and the amount of oxygen consumed in the oxidation reaction step by glucose oxidase is detected by a dissolved oxygen electrode. |
