abstract | (57) [Summary] [Purpose] The purpose is to produce oligosaccharides having a high panose content by fermentation. [Structure] A microorganism having panose-producing ability belonging to the genus Aureobasidium in a medium containing maltose as a main component as a carbon source, preferably aureobasidium sp.SN-G42 strain, aureobasidium sp.SN. -124A strain, Aureobasidium sp. SN-γ9 6 strains or Aureobasidium pullulans were inoculated and cultured aerobically to produce and accumulate panose in the medium, which was separated and collected, and the separated bacterial cells were again used for the production of oligosaccharides having a high panose content. A method for producing an oligosaccharide having a high panose content, which is used. |
