abstract | (57) [Summary] [Object] To provide a sealed heat-sterilized starch-containing beverage product which does not cause germination and growth of thermostable spore spores even when stored at high temperature for a long time and has excellent storage stability. [Structure] Sealed heat sterilization containing a diglycerin fatty acid monoester composition composed of fatty acids in which the total amount of one kind or a mixture of two or more kinds of lauric acid, myristic acid and palmitic acid is 70% by weight or more. Starch-containing beverage product. [Effect] According to the present invention, the total amount of one kind or a mixture of two or more kinds of lauric acid, myristic acid and palmitic acid is composed of 70% by weight or more of fatty acid, and the monoester content is 70% by weight or more. By blending the diglycerin fatty acid monoester composition, in a starch-containing beverage product that has been sterilized by heat and sealed, germination and growth of heat-resistant spore-forming spores are suppressed, and flat sour spoilage is prevented, so that long-term high temperature treatment is possible.
