[Structure] Sealed heat sterilization containing a diglycerin fatty acid monoester composition composed of fatty acids in which the total amount of one kind or a mixture of two or more kinds of lauric acid, myristic acid and palmitic acid is 70% by weight or more. [Effect] According to the present invention, the total amount of one kind or a mixture of two or more kinds of lauric acid, myristic acid and palmitic acid is composed of 70% by weight or more of fatty acid, and the monoester content is 70% by weight or more.
