abstract (57) [Summary] [Objective] By using a novel acid-resistant and thermostable glucose isomerase, fructose is produced from a starch saccharified solution without substantially adjusting the pH under acidic conditions. [Action] A novel acid-resistant and thermostable glucose isomerase that differs from known glucose isomerases in enzyme chemical properties such as action pH and thermostability, and Streptomyces sp. Producing and collecting the acid, a method for producing a thermostable glucose isomerase, and allowing the enzyme to act on a glucose-containing liquid, A method for producing fructose, which comprises obtaining a fructose-containing liquid.
