titleOfInvention Soy protein manufacturing method
abstract (57) [Summary] [Purpose] Even if soybean protein is extracted from a soybean protein-containing raw material using a relatively low concentration inorganic salt solution, phytic acid and its salts can be sufficiently removed. Provided is a method for producing soybean protein having a low content of phytic acid and its salt, which can be easily and quickly desalted, and is economically advantageous. [Composition] Soy protein-containing raw material contains 1.0% by weight or more of 7. Soybean protein is extracted by adding an inorganic salt solution with a concentration of less than 5% by weight, and the extract is desalted by electrodialysis or ultrafiltration, followed by isoelectric precipitation to remove phytic acid and its salts. To do. As the inorganic salt solution, it is preferable to use a solution of an alkali metal salt such as sodium chloride, potassium chloride or sodium sulfate.
