(57) [Summary] [Composition] A mayonnaise and a dressing product including a low calorie low fat mayonnaise and a low calorie low fat spoonable or pourable dressing composition. The product as described above having, as a preservative system, a sufficient amount of glucono delta lactone and optionally acetic acid to reduce the pH to about 3.5 or less, preferably about 3.3 or less. The composition has improved resistance to microbial spoilage, thereby exhibiting an extended shelf life compared to currently marketed products, and is also well-suited for currently marketed products. Does not have a pungent, acidic, spicy taste. |
