(57) [Summary] [Structure] An agar-degrading enzyme that decomposes agarose to selectively produce neo-agarobiose, and a method for producing neo-agarobiose using the enzyme. [Effect] The agar-degrading enzyme of the present invention selectively decomposes agar into neo-agarobiose. Therefore, it is possible to obtain neo-agarobiose, which is an agar oligosaccharide having functions such as starch anti-aging action, non-digestion action, and bacteriostatic action, without a sugar isolation / purification step. Can be advantageously mass-produced. |
