(57) [Summary] [Objective] A gene encoding a rhamnogalactunolase is isolated from an organism of a specific origin, and a cell having a high rhamnogalacturonase-producing ability is isolated by using recombinant DNA technology. The rhamnogalactunolase produced by such cells is then used in various processes such as the production of fruit juice. A recombinant DNA having a nucleotide sequence encoding a polypeptide having rhamnogalacturonase activity, a polypeptide obtained by expression of the recombinant DNA, a cell containing the recombinant DNA, and a ram produced by the cell.
