The present invention provides a DNA encoding the amino acid shown in SEQ ID NO: 1 derived from pig kidney. Furthermore, it was confirmed that the gene can be incorporated into an appropriate expression system to produce MUT, and thus, mutarotase can be produced inexpensively in large quantities. |
