abstract (57) [Summary] [Structure] A bifidobacteria strain that belongs to Bifidobacterium longum and produces a large amount of polysaccharides outside the cells. A method for producing a water-stable food product, which uses a culture obtained by culturing the Bifidobacterium strain in a liquid medium. A water retention stabilizer containing a culture obtained by culturing the Bifidobacterium strain in a liquid medium as an active ingredient. A method for producing fermented milk having high tissue stability and smooth tissue, using the Bifidobacteria strain as a starter. [Effect] Since the culture of the strain of the present invention can prevent the syneresis of food, it can be used as a water retention stabilizer for food. When fermented milk is produced using the strain of the present invention, it is possible to obtain a fermented milk having high tissue stability and smoothness.
