abstract | (57) [Summary] [Purpose] Yeast is used to produce an antibacterial substance that has an antibacterial effect against many bacteria using yeast, which is a general microorganism that is relatively easy to grow. It is in the manufacture of safe food preservatives that focuses on the fact that it does not produce substances that are harmful to the human body. [Structure] After the yeast was grown in a medium containing glucose, nutrients and inorganic salts necessary for yeast growth until a stationary phase was reached, the yeast was removed and, if necessary, glucose was replenished, and the yeast was again made stationary. The antibacterial substance is produced and accumulated by carrying out the operation of multiplying at least two times until the period is reached. |
