titleOfInvention Method for producing galactooligosaccharide
abstract (57) [Summary] [Composition] A mixture of lactulose and lactose, A galactooligosaccharide represented by the formula (I) is produced by allowing a yeast or a treated product thereof to act on a yeast belonging to the genus Rhodotolura and having the ability to produce the galactooligosaccharide represented by the formula (I) from lactulose. A method for producing a galactooligosaccharide, comprising: [Chemical 1] (In the formula, n is an integer of 1 to 2) [Effect] The galactooligosaccharide represented by the formula (I) produced by the method of the present invention selectively selects specific enterobacteria such as bifidobacteria. Since it can be proliferated, the present invention can provide a method for producing a galacto-oligosaccharide that can be expected to be used for a pharmaceutical such as a constipation-improving agent and an intestinal regulating agent, or a functional food.
