(57) [Summary] [Object] To provide a novel protease useful for limited degradation of proteins or peptides. [Structure] It was found that a microorganism belonging to the genus Lactobacillus produces a novel protease NprL, and a gene encoding the enzyme was cloned, and its nucleotide sequence was clarified. In addition, the enzyme was purified and its enzymatic chemistry was clarified. Further, a mutant protease having amino acid substitution of protease NprL was prepared to obtain a protease having a new specificity. |
