abstract (57) [Summary] [Structure] A method for increasing the yield of sprouts, which comprises treating sprouts seeds with allyl isothiocyanate. A method for increasing the yield of sprouts, which comprises treating the bean sprouts with allyl isothiocyanate and hypochlorite. [Effect] According to the method of the present invention, spoilage of sprouts can be prevented and the yield of sprouts can be increased without affecting germination and growth of sprouts seeds. Also, Since AIT used in the method of the present invention is a highly safe component contained in mustard and horseradish, the method of the present invention is a safe and simple method applicable to foods.
