abstract (57) [Summary] [Object] To provide a production method suitable for industrial production capable of producing a highly pure N-long chain acylamino acid and a salt thereof using an inexpensive raw material. [Structure] A fatty acid alkyl ester (2) is reacted with aminonitrile (3) in the presence of a basic catalyst to obtain amide nitrile (1), which is hydrolyzed in the presence of a basic substance to give N-length. A chain acylamino acid salt (4) was obtained, and this aqueous solution was adjusted to pH 1 to 5 with a mineral acid to obtain an N-long chain acylamino acid. Separate (5). [Chemical 1] (In the formula, R 1 CO- is a fatty acid residue of C 8-22 , R 2 is H or C 1-3. Is an alkyl group, R 3 is a C 1-5 alkylene group, R 4 is a C 1-4 alkyl group, and M is a cation. )
