abstract | (57) [Summary] [Object] To provide a production method suitable for industrial production capable of producing a highly pure N-long chain acylamino acid and a salt thereof using an inexpensive raw material. [Structure] A fatty acid alkyl ester (2) is reacted with aminonitrile (3) in the presence of a basic catalyst to obtain amide nitrile (1), which is hydrolyzed in the presence of a basic substance to give N-length. A chain acylamino acid salt (4) was obtained, and this aqueous solution was adjusted to pH 1 to 5 with a mineral acid to obtain an N-long chain acylamino acid. Separate (5).
