abstract | (57) [Summary] [Structure] Triglyceride fatty acid ester derivative in which one alkyl group is substituted with naphthyl. Using this derivative as a substrate for lipase activity measurement, a fatty acid ester containing another alkyl group which is not substituted in the naphthyl group in the derivative is hydrolyzed by lipase to produce a diglyceride fatty acid ester derivative or a monoglyceride fatty acid ester derivative. A method for measuring lipase activity, which comprises separating, determining the amount of each derivative, and determining the enzyme activity of the lipase from the amount of the derivative. [Effect] According to this measuring method, it is possible to detect contamination of dairy products with bacteria or the like. |
