abstract (57) [Summary] [Purpose] To mix frozen cakes with lysolecithin. [Structure] Lysolecithin obtained by decomposing lecithin with an enzyme and glycerin fatty acid ester are added to a frozen dessert cake. The frozen dessert cake containing lysolecithin and glycerin fatty acid ester has almost no deterioration in texture due to freezing.
