abstract | (57) [Summary] [Purpose] To provide chitosan having a low molecular weight, which exhibits water solubility even in an alkaline region, has a narrow dispersity, and a method for producing the same. [Structure] A low molecular weight chitosan that exhibits water solubility even in the alkaline range and has a narrow degree of dispersion. Chitosan having an average molecular weight of 4000 to 6000 and a dispersity of 1.10 ± 0.5, which is preferably water-soluble even in an alkaline region. It is prepared by dissolving chitosan in an acid and adding hydrogen peroxide of 20 to 50% by weight of chitosan. The raw material chitosan is obtained by partially or completely deacetylating chitin, and the degree of deacetylation does not matter, but it is preferably deacetylated to 60% or more, which is a degree that can be dissolved in an acid. [Effect] It is possible to provide water-soluble chitosan suitable for use in foods, cosmetics, plant fertilizers, and feeds by utilizing water solubility. It is possible to provide a production method that is safe and has a small amount of by-product of water-insoluble chitosan. |
