[Structure] A novel protease having the following physicochemical properties (1) Cleavage of leucine and phenylalanine on the amino group side (2) Decomposition of casein into endo type to lower the molecular weight (3) Molecular weight of about 34,000 under SDS-PAGE (4) Ultraviolet absorption spectrum λmax = 280 nm (5) Optimum pH 6-8 (6) Optimum temperature 45-55 ° C and Bacillus badius JT0127 (Microtechnology Research Institute, No. 12722). [Effect] A peptide having leucine and phenylalanine at the N-terminal can be efficiently produced.
