abstract (57) [Summary] [Structure] An optically active 3-hydroxytetradecanoic acid ester is obtained by using brewery yeast as a reaction catalyst to obtain a hydroxycarboxylic acid and then performing an alkyl esterification reaction on a methyl 3-oxotetradecanoate derivative. Is a manufacturing method. [Effect] According to the present invention, an optically active 3-substituted-3-hydroxytetradecanoic acid ester can be produced with a high optical yield under mild reaction conditions.
