abstract (57) [Summary] (Modified) [Objective] To provide a simplified and efficient method for selectively separating highly unsaturated fatty acids from an aqueous silver complex solution. [Structure] A highly unsaturated fatty acid-containing material is contact-treated with an aqueous medium containing a silver salt, and then the resulting aqueous solution is extracted with supercritical carbon dioxide. Polyunsaturated fatty acids having an unsaturation degree of 3 or more are selectively separated. [Effect] It is possible to selectively separate highly unsaturated fatty acids.
