abstract | (57) [Summary] [Objective] A pectin with a low methyl ester content is produced without degrading the pectin molecular chain, by using a novel enzyme having an inexpensive methyl esterase activity that is easily available. [Structure] Enzyme group having pectin methylesterase activity which is not inhibited by tyrosine-selective inhibitor, method for reducing methyl ester content of pectin using this enzyme, and low methyl ester type pectin having natural sugar side chain obtained by this method . This enzyme is obtained from plant material extracts such as papaya sap, fig sap, bromeliad sap and wheat germ, and is present in crude preparations of ficin, papain, bromelain and / or wheat germ lipase, for example. This enzyme behaves differently from traditional pectin methylesterases towards tyrosine-selective inhibitors and other inhibitors. |
