(57) [Summary] [Structure] A method for producing a branched cyclodextrin, which comprises allowing a debranching enzyme to act on a solution containing cyclodextrin and a branched oligosaccharide. According to the present invention, a branched CD in which a maltosyl group or a maltotriosyl group is bound to glucose in a CD molecule by an α-1,6 bond is obtained by utilizing the glycosyl transfer activity of a debranching enzyme. In particular, it is possible to efficiently obtain a branched CD in which only one molecule of maltosyl group or maltotriosyl group is bonded. |
