(57) [Summary] [Structure] Symbiobacterium A heat-resistant β-tyrosinase is cultured from a host microorganism transformed with an expression vector having a heat-resistant L-tyrosinase gene inserted from a microorganism belonging to the genus and capable of producing heat-resistant β-tyrosinase. A method for producing thermostable β-tyrosinase, which comprises collecting, and a gene system that can be used in this method. [Effect] The thermostable β-tyrosinase-producing strain belonging to Symbiobacterium can be produced only by symbiosis with a microorganism belonging to the genus Bacillus, and the enzyme productivity is low (1% or less of the total protein). The transformed host grows alone and can produce a large amount of enzyme, about 30% of the total protein. |
