abstract (57) [Summary] [Objective] To provide a method for producing pullulan of high molecular weight and low in pigment production. [Composition] From natural sources, Aureobasidium Collecting at least one wild strain of pullulans, b) imparting to the collected strain fermentation conditions such that the microorganism is rich in yeast-like cells, and further separating the yeast-like cells thus produced, c) Colonies are formed from the separated yeast-like cells, and d) colonies containing yeast-like cells and less colored than other cells are visually selected from step c), and e) the pigment production of the selected colonies is examined. F) It was decided to obtain a purified culture of Aureobasidium pullulans that produces the least amount of pigment when culturing is performed by selecting an isolate that produces the least amount of pigment in deep culture.
