[Structure] A new yeast strain and its mutant strain bred by crossing between haploid strains derived from sake yeast 701 and sake yeast 901. A method for producing aromatic sake using the new yeast strain or a mutant strain thereof. [Effect] When ordinary sake is charged, the production of refined sake with a high amount of isoamyl acetate and ethyl caproate, It is possible at low cost and in a short period of time with stability. |
