abstract | (57) [Summary] [Purpose] To provide a powdered coffee preparation that does not solidify or deteriorate in flavor and the like even when stored at high temperature for a long time. [Structure] A powdered coffee preparation containing at least the following (a) and (b), a ratio of (a) powdered dairy product to the final product of 95% (weight) or less, and (b) p of coffee extract. After adjusting H in the range of 5.0 to 9.0, the ratio of the powdered coffee obtained by drying is 5% (weight) or more with respect to the final product. |
